Fermented Tea Leaves, Laphet in Burmese, is the most famous Burmese foods. It is considered as a national delicacy that plays a significant role in Burmese society, and remains a traditional Burmese gesture of hospitality. The fermented tea leaves are eaten on their own as dessert, but they’re also served in the form of Laphet Thoke, a salad of pickled tea leaves. It consists of fermented tea leaves dressing and crunchy mix as topping. To make the dish, the sour, slightly bitter fermented tea leaves are mixed with shredded cabbage, sliced tomatoes, crunchy fried beans, nuts, peas, a splash of oil and pungent slices of chili and garlic. The dish is versatile. It can be a snack, an appetizer or, coupled with a plate of rice, a meal.
